- 2 cups seedless grapes (red or green)
- 1 tablespoon olive oil
- 1 tablespoon honey
- 1/4 teaspoon salt
- 1 cup ricotta cheese
- 1 teaspoon vanilla extract
- 1 tablespoon powdered sugar
- Fresh mint leaves for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a mixing bowl, toss the grapes with olive oil, honey, and salt until evenly coated. Spread the grapes in a single layer on the prepared baking sheet.
- Roast the grapes in the preheated oven for 20-25 minutes, or until they are soft and starting to burst. Remove from the oven and let cool slightly.
- While the grapes are roasting, prepare the whipped ricotta. In a medium bowl, combine the ricotta cheese, vanilla extract, and powdered sugar. Use a hand mixer or whisk to whip until smooth and creamy.
- To serve, spoon the whipped ricotta onto a serving plate or individual bowls. Top with the warm roasted grapes and drizzle any remaining juices from the baking sheet over the top. Garnish with fresh mint leaves if desired.
