- 2 ripe plantains

- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and slice the plantains diagonally into 1/2 inch thick pieces.
- In a mixing bowl, combine the olive oil, paprika, cumin, cayenne, and salt.
- Add the sliced plantains to the bowl and toss to coat evenly.
- Spread the plantains in a single layer on a baking sheet.
- Roast for about 20-25 minutes, flipping halfway through, until golden brown.
- Serve warm.
