Description

A savory and delicious roasted turnip and bacon hash that is perfect for any meal.

Ingredients

Scale
  • 2 medium turnips, peeled and cut into small cubes (approximately 2 cups)
  • 4 slices of bacon, diced
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 2 large eggs (optional, for topping)
  • Chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, toss together the cubed turnips, diced bacon, chopped onion, and red bell pepper.
  3. Drizzle the olive oil over the top, then add the garlic powder, smoked paprika, salt, and pepper. Mix thoroughly until all the ingredients are evenly coated.
  4. Transfer the mixture to a baking sheet lined with parchment paper, spreading it out in a single layer.
  5. Roast in the oven for about 25-30 minutes, stirring once halfway through, until the turnips are soft and the bacon has become crispy.
  6. If you choose to add eggs, prepare them in a skillet to your preference while the hash is roasting.
  7. Once done, serve the warm turnip and bacon skillet topped with your cooked eggs, and finish with a sprinkle of fresh parsley for a burst of color and flavor.

Notes

  • For an extra kick, consider mixing in a dash of cayenne pepper or some finely chopped jalapeños before roasting.
  • You can also swap the bacon for turkey bacon or a plant-based alternative for a healthier option.
