- 2 medium turnips, peeled and cut into small cubes (approximately 2 cups)
- 4 slices of bacon, diced
- 1 medium onion, chopped
- 1 red bell pepper, chopped
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and freshly ground black pepper to taste
- 2 large eggs (optional, for topping)
- Chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, toss together the cubed turnips, diced bacon, chopped onion, and red bell pepper.
- Drizzle the olive oil over the top, then add the garlic powder, smoked paprika, salt, and pepper. Mix thoroughly until all the ingredients are evenly coated.
- Transfer the mixture to a baking sheet lined with parchment paper, spreading it out in a single layer.
- Roast in the oven for about 25-30 minutes, stirring once halfway through, until the turnips are soft and the bacon has become crispy.
- If you choose to add eggs, prepare them in a skillet to your preference while the hash is roasting.
- Once done, serve the warm turnip and bacon skillet topped with your cooked eggs, and finish with a sprinkle of fresh parsley for a burst of color and flavor.
Notes
- For an extra kick, consider mixing in a dash of cayenne pepper or some finely chopped jalapeños before roasting.
