Instructions
- Preheat your oven to 350°F (175°C).

- Add the egg yolk and cold water, mixing until a dough forms.
- On a lightly floured surface, roll out the dough to a thickness of about ¼ inch.
- Use a round cutter to create circles and gently press them into a muffin tin to shape your tartlet bases.
- Use a fork to poke holes in the bottoms to prevent bubbling.
- Bake the shells for approximately 15-18 minutes, or until they turn a light golden brown.
- Once baked, allow them to cool completely in the tin.
- In a separate bowl, whip the heavy cream until it reaches soft peaks.
- In another bowl, blend the cream cheese with powdered sugar until smooth and creamy.
- Carefully fold the whipped cream into the cream cheese mixture until fully combined.
- Stir in the rose water and half of the chopped pistachios, folding gently to maintain the airy texture.
- Fill each cooled tartlet shell with the rose pistachio cream, smoothing the tops.
- Sprinkle the remaining pistachios over each tartlet and, if desired, add fresh rose petals for a touch of elegance.
- Refrigerate the tartlets for at least 30 minutes to allow the flavors to develop and the cream to set.
