Description

Delicious and nutritious salmon served over hearty braised lentils.


Ingredients

Scale
  • 4 fillets salmon
  • 1 cup lentils
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 teaspoon thyme
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Rinse the lentils and set aside.
  2. In a pot, heat the olive oil over medium heat and sauté the onion and garlic until soft.
  3. Add the lentils, vegetable broth, and thyme. Bring to a boil, then reduce to a simmer.
  4. Cover and cook for 25-30 minutes, until lentils are tender.
  5. Season the salmon fillets with salt and pepper.
  6. In a skillet, cook the salmon over medium-high heat for 4-5 minutes on each side or until cooked through.
  7. Serve the salmon over the braised lentils.

Notes

  • For added flavor, marinate the salmon in lemon juice and herbs before cooking.
  • Feel free to add diced carrots or celery to the lentils for extra vegetables.
