Ingredients

- 4 fillets salmon
- 1 cup lentils
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1 teaspoon thyme
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Rinse the lentils and set aside.
- In a pot, heat the olive oil over medium heat and sauté the onion and garlic until soft.
- Add the lentils, vegetable broth, and thyme. Bring to a boil, then reduce to a simmer.
- Cover and cook for 25-30 minutes, until lentils are tender.
- Season the salmon fillets with salt and pepper.
- In a skillet, cook the salmon over medium-high heat for 4-5 minutes on each side or until cooked through.
- Serve the salmon over the braised lentils.
Notes
- For added flavor, marinate the salmon in lemon juice and herbs before cooking.
- Feel free to add diced carrots or celery to the lentils for extra vegetables.
