- 1 cup almond flour
- 1/4 cup ground flaxseed
- 1/2 teaspoon baking powder
- 1/2 teaspoon sea salt
- 1/4 cup extra virgin olive oil
- 2 large eggs
- 1/4 cup filtered water
- 1 can (3.75 ounces) sardines packed in olive oil, drained
- 1/2 cup pitted Kalamata olives
- 2 tablespoons capers, rinsed and drained
- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon freshly squeezed lemon juice
- 1 clove garlic, finely minced
- Freshly ground black pepper to taste
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- In a large bowl, mix together the almond flour, ground flaxseed, baking powder, and sea salt until well combined.
- In a separate bowl, whisk the olive oil, eggs, and water together until smooth.
- Gradually add the wet ingredients to the dry mixture, stirring until a cohesive dough forms.
- Shape the dough into a flat, round disc on the prepared baking sheet, aiming for a thickness of about 1/4 inch.
- Bake in the preheated oven for 15-20 minutes, or until the edges turn golden brown.
- Remove from the oven and allow to cool for a few minutes.
- While the bread is cooling, prepare the topping by combining sardines, Kalamata olives, capers, parsley, lemon juice, and garlic in a food processor. Pulse until chunky yet spreadable.
- Season with freshly ground black pepper.
- Once the bread has cooled slightly, spread the sardine and olive topping over the surface, slice into wedges, and serve immediately.

- For an extra zing, consider adding a dash of red pepper flakes to the topping.
