  • 1 tablespoon unsalted butter, cut into small cubes
  • 1 pie crust (store-bought or homemade)
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)


Instructions

  1. Begin by heating your oven to 425°F (220°C).
  2. In a spacious bowl, mix together the Saskatoon berries, sugar, cornstarch, lemon juice, vanilla extract, and sea salt. Stir gently until the berries are evenly coated with the mixture.
  3. Take your pie crust and press it into a 9-inch pie dish, ensuring it fits snugly. Trim any overhanging edges for a neat finish.
  4. Spoon the berry mixture into the prepared crust, spreading it out evenly. Scatter the butter cubes over the top of the filling.
  5. Roll out a second pie crust and place it over the berry filling. Trim the edges and crimp them together to seal the pie. Create several slits in the top crust to allow steam to escape during baking.
  6. In a small bowl, whisk the egg and milk together. Use this mixture to brush the top of the pie, giving it a beautiful golden color when baked.
