Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried oregano
  • 1 cup canned pumpkin puree
  • 1/2 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup chopped fresh parsley (optional)


Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, and oregano until well combined.
  3. In another bowl, mix the pumpkin puree, crumbled feta cheese, olive oil, eggs, and milk until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay. If using, fold in the chopped parsley.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For added flavor, mix in 1/2 cup of chopped sun-dried tomatoes or olives.
  • Substitute the feta cheese with goat cheese for a different taste profile.
