Description

Delicious Sicilian Rice Balls, or Arancini, are a popular Italian snack made with rice, breadcrumbs, and a savory filling.

Ingredients

Scale
  • 2 cups cooked Arborio rice
  • 1 cup mozzarella cheese, diced
  • 1 egg, beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 cups marinara sauce (for dipping)
  • Vegetable oil (for frying)

Instructions

  1. In a large bowl, combine the cooked Arborio rice, mozzarella cheese, egg, Parmesan cheese, salt, pepper, and garlic powder until mixed well.
  2. Form the mixture into balls about the size of a golf ball.
  3. Roll each ball in breadcrumbs until fully coated.
  4. In a deep frying pan, heat vegetable oil over medium heat.
  5. Fry the balls in batches until golden brown, about 3-4 minutes per side.
  6. Remove and drain on paper towels.
  7. Serve warm with marinara sauce for dipping.

Notes

  • These can be made ahead of time and frozen before frying.
  • For an extra kick, add some cooked sausage or peas into the filling.
  • Ensure the oil is hot enough for frying to prevent soggy rice balls.
