- 4 large eggs
- 2 cups fresh spinach
- 1/2 cup Greek yogurt
- 2 tablespoons chili oil
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt to taste
- Black pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a cast-iron skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté until fragrant.
- Add the spinach and cook until wilted.
- Make 4 small wells in the spinach and crack an egg into each well.
- Season with salt and pepper.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the eggs are set.
- Remove from the oven and top with Greek yogurt and chili oil before serving.

- This dish can be served with crusty bread for a complete meal.
