Description

A delicious and nutritious dish featuring baked eggs nestled in a bed of sautéed spinach, topped with creamy yogurt and a drizzle of spicy chili oil.


Ingredients

  • 4 large eggs
  • 2 cups fresh spinach
  • 1/2 cup Greek yogurt
  • 2 tablespoons chili oil
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a cast-iron skillet, heat the olive oil over medium heat.
  3. Add the minced garlic and sauté until fragrant.
  4. Add the spinach and cook until wilted.
  5. Make 4 small wells in the spinach and crack an egg into each well.
  6. Season with salt and pepper.
  7. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the eggs are set.
  8. Remove from the oven and top with Greek yogurt and chili oil before serving.
