Description

A delicious and vibrant dish featuring tender chicken and colorful vegetables, topped with a creamy jalapeño verde sauce.


Ingredients

  • 1 lb chicken breast, thinly sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Flour or corn tortillas
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup fresh cilantro
  • 1 jalapeño, seeded
  • 1 garlic clove
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. In a bowl, toss chicken with chili powder, cumin, paprika, garlic powder, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Cook chicken until browned and cooked through. Remove and set aside.
  3. In the same skillet, add more oil if needed and sauté peppers and onion until tender.
  4. Blend all sauce ingredients until smooth.
  5. Return chicken to skillet, mix with veggies, and drizzle with creamy jalapeño verde sauce.
  6. Serve with warm tortillas.

Notes

  • Adjust the spice level by adding more or less jalapeño.
  • For a healthier option, use Greek yogurt instead of sour cream.
