- 1 lb chicken breast, thinly sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Flour or corn tortillas
- 1/2 cup sour cream or Greek yogurt
- 1/2 cup fresh cilantro
- 1 jalapeño, seeded
- 1 garlic clove
- Juice of 1 lime
- Salt to taste
Instructions
- In a bowl, toss chicken with chili powder, cumin, paprika, garlic powder, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat. Cook chicken until browned and cooked through. Remove and set aside.
- In the same skillet, add more oil if needed and sauté peppers and onion until tender.
- Blend all sauce ingredients until smooth.
- Return chicken to skillet, mix with veggies, and drizzle with creamy jalapeño verde sauce.
- Serve with warm tortillas.
Notes
- Adjust the spice level by adding more or less jalapeño.
- For a healthier option, use Greek yogurt instead of sour cream.
- Can be served with rice or salad for a complete meal.
