Description

A hearty and delicious Slow Cooker Cowboy Casserole that combines ground beef, vegetables, and tater tots for a family-friendly meal.


Ingredients

  • 1 lb (450 g) ground beef
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes (with juices)
  • 1 can (10 oz) cream of mushroom soup
  • 1/2 cup milk
  • 2 cups shredded cheddar cheese
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 bag (about 30 oz) frozen tater tots
  • Optional: chopped green onions or parsley for garnish

Instructions

  1. In a skillet over medium heat, cook the ground beef with onion and garlic until browned. Drain excess fat.
  2. In a large bowl, combine the cooked beef mixture, corn, diced tomatoes, cream of mushroom soup, milk, cheese, paprika, salt, and pepper. Stir well.
  3. Spray the slow cooker with non-stick spray. Layer half the tater tots on the bottom, then pour in the beef mixture. Top with the remaining tater tots.
  4. Cover and cook on LOW for 5–6 hours or on HIGH for 2.5–3 hours, until hot and bubbly.
  5. In the last 15–20 minutes, sprinkle extra cheese on top and let it melt. Garnish with green onions or parsley if desired.

  • Feel free to customize the recipe by adding your favorite vegetables.
  • This dish can be made ahead of time and stored in the refrigerator before cooking.
