- 2 tbsp butter
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups broccoli florets (fresh or frozen)
- 3 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup milk
- 2 cups smoked Gouda cheese, shredded
- ½ tsp smoked paprika
- Salt and black pepper, to taste
- Croutons or extra cheese, for garnish
Instructions
- In a large pot, heat butter and olive oil over medium heat. Add onion and garlic; sauté until fragrant and softened.
- Add broccoli florets and broth. Bring to a boil, then reduce heat and simmer for 10–12 minutes, until broccoli is tender.
- Using an immersion blender (or transfer to a blender), puree the soup until smooth.
- Return soup to the pot. Stir in heavy cream, milk, smoked paprika, salt, and pepper. Simmer on low for 5 minutes.
- Add shredded smoked Gouda cheese, stirring until melted and creamy.
- Serve hot, topped with croutons or extra cheese if desired.
