Ingredients

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups broccoli florets (fresh or frozen)
  • 3 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup milk
  • 2 cups smoked Gouda cheese, shredded
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • Croutons or extra cheese, for garnish


Instructions

  1. In a large pot, heat butter and olive oil over medium heat. Add onion and garlic; sauté until fragrant and softened.
  2. Add broccoli florets and broth. Bring to a boil, then reduce heat and simmer for 10–12 minutes, until broccoli is tender.
  3. Using an immersion blender (or transfer to a blender), puree the soup until smooth.
  4. Return soup to the pot. Stir in heavy cream, milk, smoked paprika, salt, and pepper. Simmer on low for 5 minutes.
  5. Add shredded smoked Gouda cheese, stirring until melted and creamy.
  6. Serve hot, topped with croutons or extra cheese if desired.
