Description

Delicious meatloaf cupcakes wrapped in bacon and drizzled with smoky bourbon BBQ sauce, perfect for a unique twist on a classic dish.


Ingredients

  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1 cup breadcrumbs
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 2 eggs
  • 1/4 cup Worcestershire sauce
  • 1/4 cup BBQ sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 slices bacon


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, ground pork, breadcrumbs, onion, bell pepper, eggs, Worcestershire sauce, BBQ sauce, smoked paprika, garlic powder, salt, and pepper. Mix until well combined.
  3. Line a muffin tin with strips of bacon, wrapping them around the edge.
  4. Fill each bacon-wrapped cup with the meat mixture, pressing down slightly.
  5. Bake for about 25-30 minutes, or until the meatloaf is cooked through.
  6. Brush the tops with additional BBQ sauce during the last 5 minutes of baking for extra flavor.
  7. Let cool for a few minutes before serving.
