Discover the delightful South African Bobotie-Stuffed Peppers, a flavorful dish combining spiced meat and fresh vegetables.


Ingredients

  • 1 pound ground beef or lamb
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 tablespoon brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 cup bread crumbs
  • 1 cup milk
  • 2 large eggs
  • Salt and pepper to taste
  • 4 large bell peppers (any color)
  • 1/4 cup raisins or sultanas
  • 1/4 cup slivered almonds (optional)
  • Fresh cilantro or parsley for garnish


Instructions

  1. Preheat your oven to 375°F.
  2. In a large skillet over medium heat, sauté the chopped onion in a bit of oil until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Add the ground beef or lamb to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat.
  4. Stir in the curry powder, turmeric, cinnamon, brown sugar, Worcestershire sauce, and season with salt and pepper. Cook for another 2 minutes.
  5. Remove the skillet from heat and mix in the bread crumbs and raisins. Let it cool slightly.
  6. In a separate bowl, whisk together the milk and eggs. Pour half of this mixture into the meat mixture and stir until combined.
  7. Cut the tops off the bell peppers and remove the seeds. Place them upright in a baking dish.
  8. Stuff each pepper with the meat mixture, pressing down gently to pack it in. Pour the remaining milk and egg mixture over the stuffed peppers.
  9. If using, sprinkle slivered almonds on top of the peppers.
  10. Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until the peppers are tender and the tops are golden.
  11. Garnish with fresh cilantro or parsley before serving.
