South African Curry in Hollowed Bread

Description

A delicious and unique dish featuring aromatic South African curry served in a hollowed-out loaf of bread.


Ingredients

  • 1 loaf round bread
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 can (15 oz) coconut milk
  • 2 cups vegetables (carrots, bell peppers, peas)
  • 1 can (15 oz) chickpeas, drained
  • Salt and pepper to taste


Instructions

  1. Heat oil in a large pot over medium heat. Add onion, garlic, and ginger; sauté until soft.
  2. Stir in curry powder, coriander, and cumin; cook for 1 minute.
  3. Add coconut milk and bring to a simmer.
  4. Stir in vegetables and chickpeas; simmer until vegetables are tender.
  5. Season with salt and pepper.
  6. While the curry cooks, hollow out the bread loaf.
  7. Once the curry is ready, fill the hollowed bread with the curry mixture.
  8. Serve immediately.

Notes

  • This dish can be made vegetarian by using vegetable broth.
  • Feel free to add your favorite proteins or vegetables.
