Description
A delicious and unique dish featuring aromatic South African curry served in a hollowed-out loaf of bread.
Ingredients

- 1 loaf round bread
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 can (15 oz) coconut milk
- 2 cups vegetables (carrots, bell peppers, peas)
- 1 can (15 oz) chickpeas, drained
- Salt and pepper to taste
Instructions
- Heat oil in a large pot over medium heat. Add onion, garlic, and ginger; sauté until soft.
- Stir in curry powder, coriander, and cumin; cook for 1 minute.
- Add coconut milk and bring to a simmer.
- Stir in vegetables and chickpeas; simmer until vegetables are tender.
- Season with salt and pepper.
- While the curry cooks, hollow out the bread loaf.
- Once the curry is ready, fill the hollowed bread with the curry mixture.
- Serve immediately.
Notes
- This dish can be made vegetarian by using vegetable broth.
- Feel free to add your favorite proteins or vegetables.
