Description
A delightful South African dessert made with rooibos tea and vanilla, resulting in a creamy panna cotta.
Ingredients

- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup granulated sugar
- 2 tablespoons loose rooibos tea
- 1 teaspoon vanilla extract
- 2 1/2 teaspoons unflavored gelatin
- 3 tablespoons cold water
- Pinch of salt
Instructions
- Combine the heavy cream, whole milk, sugar, rooibos tea, and a pinch of salt in a saucepan.
- Warm the mixture over medium heat, stirring gently until the sugar dissolves and the mixture is steaming but not boiling.
- Remove from heat and let it steep for about 10 minutes.
- In a small bowl, sprinkle the gelatin over the cold water and let it sit undisturbed for around 5 minutes.
- Strain the cream mixture through a fine sieve into a fresh saucepan to eliminate the tea leaves.
- Add the bloomed gelatin and vanilla extract to the warm mixture, stirring until completely dissolved and smooth.
- Pour the creamy mixture into individual cups or ramekins and let them cool at room temperature.
- Cover with plastic wrap and refrigerate for at least 4 hours, or until set firmly.
- To serve, run a knife around the edges and flip onto dessert plates, or serve in cups. Optionally, top with fresh berries or a drizzle of honey.
Notes
- Ensure the mixture does not boil to maintain a smooth texture.
- For best results, allow the panna cotta to set overnight.
