Description

A delightful South African dessert made with rooibos tea and vanilla, resulting in a creamy panna cotta.


Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 2 tablespoons loose rooibos tea
  • 1 teaspoon vanilla extract
  • 2 1/2 teaspoons unflavored gelatin
  • 3 tablespoons cold water
  • Pinch of salt


Instructions

  1. Combine the heavy cream, whole milk, sugar, rooibos tea, and a pinch of salt in a saucepan.
  2. Warm the mixture over medium heat, stirring gently until the sugar dissolves and the mixture is steaming but not boiling.
  3. Remove from heat and let it steep for about 10 minutes.
  4. In a small bowl, sprinkle the gelatin over the cold water and let it sit undisturbed for around 5 minutes.
  5. Strain the cream mixture through a fine sieve into a fresh saucepan to eliminate the tea leaves.
  6. Add the bloomed gelatin and vanilla extract to the warm mixture, stirring until completely dissolved and smooth.
  7. Pour the creamy mixture into individual cups or ramekins and let them cool at room temperature.
  8. Cover with plastic wrap and refrigerate for at least 4 hours, or until set firmly.
  9. To serve, run a knife around the edges and flip onto dessert plates, or serve in cups. Optionally, top with fresh berries or a drizzle of honey.
