- 1 cup quinoa, rinsed
- 2 cups water
- 1 ripe mango, diced
- 1 red bell pepper, diced
- 1/2 cup black beans, drained and rinsed
- 1/4 cup red onion, finely chopped
- 1 avocado, sliced
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
- In a large bowl, combine the cooked quinoa, diced mango, red bell pepper, black beans, red onion, and cilantro.
- In a small bowl, whisk together the lime juice, cumin, chili powder, salt, and pepper. Drizzle the dressing over the quinoa mixture and toss gently to combine.
- Serve the quinoa mixture in bowls, topped with sliced avocado and a drizzle of olive oil.
Notes
- For added protein, consider topping the bowls with grilled chicken or shrimp.
- Substitute the mango with pineapple or peach for a different flavor profile.
