- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 4 large flour tortillas
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add fresh spinach and sauté until wilted.
- In a bowl, mix the sautéed spinach, feta cheese, garlic powder, salt, and pepper.
- Place a tortilla in the skillet, sprinkle half with mozzarella cheese, and add the spinach mixture on top.
- Fold the tortilla in half and cook until golden brown on both sides.
- Repeat with remaining tortillas and filling.
- Cut into wedges and serve warm.
Notes
- For a spicier kick, add red pepper flakes to the filling.
- These quesadillas can be made ahead and reheated for a quick meal.
