Ingredients

  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 4 large flour tortillas
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add fresh spinach and sauté until wilted.
  3. In a bowl, mix the sautéed spinach, feta cheese, garlic powder, salt, and pepper.
  4. Place a tortilla in the skillet, sprinkle half with mozzarella cheese, and add the spinach mixture on top.
  5. Fold the tortilla in half and cook until golden brown on both sides.
  6. Repeat with remaining tortillas and filling.
  7. Cut into wedges and serve warm.

Notes

  • For a spicier kick, add red pepper flakes to the filling.
