Description

A delicious twist on traditional pastitsio, this Spinach and Feta Pastitsio Pie combines creamy cheeses and fresh spinach with pasta for a comforting dish.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 10 ounces fresh spinach, washed and chopped
  • 1 cup crumbled feta cheese
  • 1 cup ricotta cheese
  • 2 large eggs
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package (16 ounces) penne pasta
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs


Instructions

  1. Preheat your oven to 375°F.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
  3. Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
  4. In a large bowl, combine the cooked spinach mixture, feta cheese, ricotta cheese, eggs, oregano, salt, and black pepper. Mix until well combined.
  5. Cook the penne pasta according to package instructions until al dente. Drain and return to the pot.
  6. Stir the spinach and cheese mixture into the cooked pasta until evenly distributed.
  7. Grease a 9×13 inch baking dish. Pour the pasta mixture into the dish, spreading it evenly.
  8. In a small bowl, mix the grated Parmesan cheese and breadcrumbs together. Sprinkle this mixture evenly over the top of the pasta.
  9. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the pie is heated through.
  10. Allow to cool for 10 minutes before slicing and serving.

Notes

  • For added flavor, consider mixing in some chopped sun-dried tomatoes or olives into the spinach mixture.
  • You can substitute the penne pasta with any pasta shape you prefer, such as fusilli or ziti, for a different texture.
