Description
A delicious twist on traditional pastitsio, this Spinach and Feta Pastitsio Pie combines creamy cheeses and fresh spinach with pasta for a comforting dish.

- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 10 ounces fresh spinach, washed and chopped
- 1 cup crumbled feta cheese
- 1 cup ricotta cheese
- 2 large eggs
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 package (16 ounces) penne pasta
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
Instructions
- Preheat your oven to 375°F.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
- Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
- In a large bowl, combine the cooked spinach mixture, feta cheese, ricotta cheese, eggs, oregano, salt, and black pepper. Mix until well combined.
- Cook the penne pasta according to package instructions until al dente. Drain and return to the pot.
- Stir the spinach and cheese mixture into the cooked pasta until evenly distributed.
- Grease a 9×13 inch baking dish. Pour the pasta mixture into the dish, spreading it evenly.
- In a small bowl, mix the grated Parmesan cheese and breadcrumbs together. Sprinkle this mixture evenly over the top of the pasta.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the pie is heated through.
- Allow to cool for 10 minutes before slicing and serving.
Notes
- For added flavor, consider mixing in some chopped sun-dried tomatoes or olives into the spinach mixture.
- You can substitute the penne pasta with any pasta shape you prefer, such as fusilli or ziti, for a different texture.
