Ingredients

  • 2 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cornstarch
  • 1/2 cup heavy cream
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon vanilla extract (for whipped cream)
  • 1 cup fresh strawberries, hulled and sliced
  • 1/4 cup fresh basil leaves, finely chopped


Instructions

  1. Preheat your oven to 225°F and line a baking sheet with parchment paper, tracing four 4-inch circles as a guide.
  2. In a mixing bowl, whisk the egg whites on medium speed until frothy. Add cream of tartar and whisk until soft peaks form.
  3. Gradually add granulated sugar, one tablespoon at a time, increasing speed to high until glossy and stiff peaks form.
  4. Gently fold in vanilla extract and cornstarch until well blended.
  5. Dollop the meringue mixture onto the parchment paper, using the circles as a guide, and create a small indentation in the center of each mound.
  6. Bake for approximately 1 hour and 15 minutes, or until firm and dry to the touch. Turn off the oven and let the nests cool inside with the door slightly open.
  7. While cooling, whip heavy cream with powdered sugar and vanilla extract until soft peaks form.
  8. Once cooled, gently lift meringues off the parchment paper, spoon whipped cream into each nest, and top with sliced strawberries and chopped basil.
  9. Enjoy immediately or chill in the refrigerator for up to an hour before serving.
