- 2 cups fresh strawberries, hulled and halved
- 1/2 cup fresh basil leaves, packed
- 1/2 cup granulated sugar
- 1/2 cup water
- 1 tablespoon lemon juice
- 1/4 cup honey
Instructions
- In a small saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar has completely dissolved. Remove from heat and let cool to room temperature.
- In a blender or food processor, combine the strawberries, basil leaves, lemon juice, and the cooled sugar syrup. Blend until smooth.
- Pour the mixture through a fine-mesh sieve into a bowl to remove any seeds and basil bits. Discard the solids.
- Cover the bowl and place it in the freezer for about 2 hours, or until the mixture is partially frozen.
- Remove the bowl from the freezer and stir the mixture with a fork to break up any ice crystals. Return to the freezer for another 2 hours.
- Once the sorbet is fully frozen, scoop it into serving bowls.
- Drizzle honey over each serving and garnish with additional basil leaves if desired.
Notes
- For a creamier texture, add 1/4 cup of coconut milk to the strawberry mixture before blending.
- Experiment with other fruits like peaches or raspberries, using the same method for a different flavor profile.
