A fun and delicious recipe for a Strawberry Pop-Tart Pie that combines the flavors of strawberry jam with a flaky crust and a sweet glaze.

- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, cold and cubed
- 2 tbsp granulated sugar
- ½ tsp salt
- 4–5 tbsp ice water
- 1 ½ cups strawberry jam or preserves
- 1 tbsp cornstarch (optional, for thicker filling)
- 1 tsp lemon juice
- 1 cup powdered sugar
- 2–3 tbsp milk
- ½ tsp vanilla extract
- Pink or red food coloring (optional)
- Rainbow sprinkles
Instructions
- Make the crust: In a bowl, combine flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Add ice water 1 tbsp at a time until dough comes together. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.
- Preheat oven: Set to 375°F (190°C).
- Prepare filling: In a small bowl, mix strawberry jam, cornstarch (if using), and lemon juice.
- Roll & fill: Roll out dough and fit into a 9-inch pie pan. Pour in strawberry filling and spread evenly.
- Bake: Bake for 35–40 minutes until crust is golden and filling is bubbly. Cool completely.
- Make glaze: Whisk powdered sugar, milk, vanilla, and food coloring until smooth. Spread glaze over cooled pie. Top with sprinkles.
- Serve: Slice and enjoy your giant Pop-Tart-inspired pie!

- For a thicker filling, use cornstarch.
