Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • 2 tbsp granulated sugar
  • ½ tsp salt
  • 4–5 tbsp ice water
  • 1 ½ cups strawberry jam or preserves
  • 1 tbsp cornstarch (optional, for thicker filling)
  • 1 tsp lemon juice
  • 1 cup powdered sugar
  • 2–3 tbsp milk
  • ½ tsp vanilla extract
  • Pink or red food coloring (optional)
  • Rainbow sprinkles


Instructions

  1. Make the crust: In a bowl, combine flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Add ice water 1 tbsp at a time until dough comes together. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.
  2. Preheat oven: Set to 375°F (190°C).
  3. Prepare filling: In a small bowl, mix strawberry jam, cornstarch (if using), and lemon juice.
  4. Roll & fill: Roll out dough and fit into a 9-inch pie pan. Pour in strawberry filling and spread evenly.
  5. Bake: Bake for 35–40 minutes until crust is golden and filling is bubbly. Cool completely.
  6. Make glaze: Whisk powdered sugar, milk, vanilla, and food coloring until smooth. Spread glaze over cooled pie. Top with sprinkles.
  7. Serve: Slice and enjoy your giant Pop-Tart-inspired pie!
