- 2 cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 cup sour cream
- 3 large eggs
- 1 tsp vanilla extract
- 2 cups fresh strawberries, diced
- ¼ cup sugar
- 1 tbsp lemon juice
- 1 package (about 36) golden Oreo cookies
- 4 tbsp unsalted butter, melted
- 1 box (3.4 oz) strawberry Jell-O powder
- Whipped cream for garnish
- Fresh strawberries for garnish
Instructions
- Prepare the crust: Combine graham cracker crumbs and melted butter. Press mixture into the bottom of a greased springform pan. Bake at 325°F (163°C) for 10 minutes and set aside.
- Make the cheesecake: Beat cream cheese and sugar until smooth. Mix in sour cream and vanilla, then add eggs one at a time. Pour over the crust.
- Bake for 50–60 minutes until the center is set. Cool completely, then refrigerate for at least 4 hours or overnight.
- Prepare the strawberry layer: In a saucepan, cook strawberries with sugar and lemon juice for 5–7 minutes until thickened. Let cool.
- Make the crumble: Crush Oreos and divide into two bowls. Mix half with strawberry Jell-O powder and half with melted butter. Toss together to create a crumbly mixture.
- Spread the strawberry sauce over the chilled cheesecake, then coat the sides with the crumble mixture.
- Garnish with whipped cream and fresh strawberries before serving.
