Description

A delicious and hearty stuffed Italian meatloaf filled with mozzarella, spinach, and sun-dried tomatoes, topped with marinara sauce and extra cheese.


Ingredients

  • 1 lb (450 g) ground beef
  • 1/2 lb (225 g) Italian sausage (or more ground beef)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup grated Parmesan
  • 2 eggs
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella
  • 1/2 cup chopped spinach (fresh or frozen, drained)
  • 1/4 cup sun-dried tomatoes (optional)
  • 1/2 cup marinara sauce
  • Extra shredded mozzarella and Parmesan for topping

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, sausage, breadcrumbs, milk, Parmesan, eggs, garlic, Italian seasoning, salt, and pepper.
  3. On a sheet of parchment paper, flatten the meat mixture into a rectangle about 1/2 inch thick.
  4. Spread mozzarella, spinach, and sun-dried tomatoes evenly over the surface, leaving a border around the edges.
  5. Carefully roll it up like a jelly roll, sealing the edges to keep the filling inside.
  6. Transfer to a baking dish. Top with marinara sauce and extra cheese.
  7. Bake for 45–50 minutes, or until the meat is cooked through and the top is golden and bubbly.
  8. Let rest 10 minutes before slicing and serving.

Notes

  • For a spicier version, add red pepper flakes to the meat mixture.
  • Feel free to substitute the ground beef with turkey for a leaner option.
  • Letting the meatloaf rest before slicing helps maintain its shape.
