Description
A delicious and hearty stuffed Italian meatloaf filled with mozzarella, spinach, and sun-dried tomatoes, topped with marinara sauce and extra cheese.

- 1 lb (450 g) ground beef
- 1/2 lb (225 g) Italian sausage (or more ground beef)
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1/4 cup grated Parmesan
- 2 eggs
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded mozzarella
- 1/2 cup chopped spinach (fresh or frozen, drained)
- 1/4 cup sun-dried tomatoes (optional)
- 1/2 cup marinara sauce
- Extra shredded mozzarella and Parmesan for topping
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine ground beef, sausage, breadcrumbs, milk, Parmesan, eggs, garlic, Italian seasoning, salt, and pepper.
- On a sheet of parchment paper, flatten the meat mixture into a rectangle about 1/2 inch thick.
- Spread mozzarella, spinach, and sun-dried tomatoes evenly over the surface, leaving a border around the edges.
- Carefully roll it up like a jelly roll, sealing the edges to keep the filling inside.
- Transfer to a baking dish. Top with marinara sauce and extra cheese.
- Bake for 45–50 minutes, or until the meat is cooked through and the top is golden and bubbly.
- Let rest 10 minutes before slicing and serving.
Notes
- For a spicier version, add red pepper flakes to the meat mixture.
- Feel free to substitute the ground beef with turkey for a leaner option.
- Letting the meatloaf rest before slicing helps maintain its shape.
