- 2 pounds beef shank, cut into chunks
- 4 cups beef broth
- 2 cups water
- 3 tablespoons soy sauce
- 2 tablespoons rice wine
- 1 tablespoon sugar
- 1 teaspoon five-spice powder
- 3 star anise
- 1 cinnamon stick
- 4 cloves garlic, minced
- 1 onion, sliced
- 2 green onions, chopped
- 4 portions fresh egg noodles
- 2 cups bok choy
Instructions
- In a large pot, brown the beef shank over medium heat.
- Add garlic and onion, sautéing until fragrant.
- Stir in the soy sauce, rice wine, sugar, five-spice powder, star anise, and cinnamon stick.
- Pour in beef broth and water, bringing to a simmer.
- Cover and cook on low heat for 2-3 hours until beef is tender.
- Remove the beef and strain the broth.
- Cook noodles according to the package instructions.
- Serve noodles in bowls, topped with beef, bok choy, and broth.
- Garnish with chopped green onions.

- This soup is best enjoyed after letting it sit overnight, as the flavors deepen.
