Description

A comforting and flavorful Taiwanese classic featuring tender braised beef, aromatic spices, and rich broth served over noodles.


Ingredients

  • 2 pounds beef shank, cut into chunks
  • 4 cups beef broth
  • 2 cups water
  • 3 tablespoons soy sauce
  • 2 tablespoons rice wine
  • 1 tablespoon sugar
  • 1 teaspoon five-spice powder
  • 3 star anise
  • 1 cinnamon stick
  • 4 cloves garlic, minced
  • 1 onion, sliced
  • 2 green onions, chopped
  • 4 portions fresh egg noodles
  • 2 cups bok choy


Instructions

  1. In a large pot, brown the beef shank over medium heat.
  2. Add garlic and onion, sautéing until fragrant.
  3. Stir in the soy sauce, rice wine, sugar, five-spice powder, star anise, and cinnamon stick.
  4. Pour in beef broth and water, bringing to a simmer.
  5. Cover and cook on low heat for 2-3 hours until beef is tender.
  6. Remove the beef and strain the broth.
  7. Cook noodles according to the package instructions.
  8. Serve noodles in bowls, topped with beef, bok choy, and broth.
  9. Garnish with chopped green onions.
