Ingredients

  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp lime juice
  • 1 tbsp honey (or brown sugar)
  • 1 tsp sesame oil
  • 1–2 tsp sriracha (optional, for spice)
  • ¼ cup warm water (to thin)
  • 2 cups cooked chicken breast, shredded
  • 1 cup shredded carrots
  • 1 cup shredded cabbage or coleslaw mix
  • ½ cup red bell pepper, thinly sliced
  • ¼ cup chopped fresh cilantro
  • 4 large flour tortillas or wraps


Instructions

  1. Make the peanut sauce: In a bowl, whisk together peanut butter, soy sauce, rice vinegar, lime juice, honey, sesame oil, and sriracha. Add warm water a little at a time until smooth and pourable.
  2. Prepare filling: In a large bowl, toss shredded chicken with half of the peanut sauce until evenly coated.
  3. Assemble wraps: Lay a tortilla flat. Add a portion of chicken, carrots, cabbage, bell pepper, and cilantro. Drizzle with extra peanut sauce.
  4. Wrap & serve: Fold in the sides and roll tightly. Slice in half if desired and serve immediately.
