A flavorful Thai Style Crab Fried Rice recipe that combines fresh crab meat with jasmine rice and aromatic seasonings.

- 2 cups cooked jasmine rice (cold, preferably day-old)
- 1 cup lump crab meat (fresh or canned, drained)
- 2 eggs, lightly beaten
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1/2 teaspoon white pepper
- 2 green onions, sliced
- 1 tablespoon vegetable oil
- Lime wedges (for serving)
- Fresh cilantro and sliced cucumber (for garnish)
Instructions
- In a large wok or skillet, heat half the oil over medium heat. Add the beaten eggs and scramble until just set. Remove from the pan and set aside.
- Add the remaining oil to the pan. Sauté the minced garlic until fragrant, about 30 seconds.
- Stir in the cold cooked rice, breaking up any clumps. Add soy sauce, fish sauce, and white pepper. Mix well to combine.
- Gently fold in the crab meat and cooked eggs. Cook for 2-3 minutes, allowing the flavors to blend without breaking up the crab too much.
- Stir in the green onions and cook for another minute.
- Plate the fried rice with lime wedges, fresh cilantro, and cucumber slices on the side.
Notes
- Using day-old rice helps to achieve the best texture.
- Feel free to adjust the amount of soy sauce and fish sauce to taste.
- Garnish with additional herbs for extra flavor.
