A delicious and nutritious tofu scramble with black beans and corn, perfect for a quick breakfast or brunch.
Ingredients

- 1 block firm tofu
- 1 cup black beans, cooked
- 1 cup corn, frozen or fresh
- 1 tablespoon olive oil
- 1 teaspoon turmeric
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt to taste
- Black pepper to taste
- Chopped fresh cilantro for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Crumble the tofu into the skillet and cook for about 5 minutes.
- Add the black beans, corn, turmeric, garlic powder, cumin, salt, and black pepper. Stir to combine.
- Cook for another 5-7 minutes, stirring occasionally until heated through.
- Serve with cilantro on top.
Notes
- For a spicier version, add chopped jalapeños.
- This scramble works great in a burrito or on top of toast.
