Description

A delicious and nutritious tofu scramble with black beans and corn, perfect for a quick breakfast or brunch.


Ingredients

Scale
  • 1 block firm tofu
  • 1 cup black beans, cooked
  • 1 cup corn, frozen or fresh
  • 1 tablespoon olive oil
  • 1 teaspoon turmeric
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt to taste
  • Black pepper to taste
  • Chopped fresh cilantro for garnish


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Crumble the tofu into the skillet and cook for about 5 minutes.
  3. Add the black beans, corn, turmeric, garlic powder, cumin, salt, and black pepper. Stir to combine.
  4. Cook for another 5-7 minutes, stirring occasionally until heated through.
  5. Serve with cilantro on top.

Notes

  • For a spicier version, add chopped jalapeños.
  • This scramble works great in a burrito or on top of toast.
