Description

A flavorful sandwich featuring curried chickpeas, inspired by Trinidadian cuisine.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons curry powder
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped
  • 4 slices whole grain bread


Instructions

  1. Heat olive oil in a pan over medium heat and sauté onions and garlic until translucent.
  2. Add bell pepper and cook for another 2 minutes.
  3. Stir in curry powder, chickpeas, salt, and black pepper. Cook for 5 minutes.
  4. Remove from heat and mix in cilantro.
  5. Spread the chickpea mixture onto bread slices to create sandwiches.

Notes

  • Serve with avocado slices for added creaminess.
