A flavorful sandwich featuring curried chickpeas, inspired by Trinidadian cuisine.
Ingredients

- 1 can chickpeas, drained and rinsed
- 2 tablespoons curry powder
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh cilantro, chopped
- 4 slices whole grain bread
Instructions
- Heat olive oil in a pan over medium heat and sauté onions and garlic until translucent.
- Add bell pepper and cook for another 2 minutes.
- Stir in curry powder, chickpeas, salt, and black pepper. Cook for 5 minutes.
- Remove from heat and mix in cilantro.
- Spread the chickpea mixture onto bread slices to create sandwiches.
Notes
- Serve with avocado slices for added creaminess.
- This recipe can be easily doubled for larger gatherings.
