Description

Deliciously moist and fluffy sponge cakes infused with tropical flavors of strawberry and coconut.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup unsweetened coconut milk
  • 1/4 cup coconut flakes
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh strawberries, diced


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, and salt.
  3. In another bowl, whisk eggs and sugar until light and fluffy.
  4. Add coconut milk and vanilla extract to the egg mixture.
  5. Gradually add the dry ingredients, mixing until just combined.
  6. Fold in diced strawberries and coconut flakes.
  7. Pour the batter into greased cake pans.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Allow to cool before serving.

Notes

  • For extra coconut flavor, use coconut oil in place of regular oil.
  • Add whipped cream and fresh strawberries on top before serving.
