Ingredients

- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup unsweetened coconut milk
- 1/4 cup coconut flakes
- 3 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup fresh strawberries, diced
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix flour, baking powder, and salt.
- In another bowl, whisk eggs and sugar until light and fluffy.
- Add coconut milk and vanilla extract to the egg mixture.
- Gradually add the dry ingredients, mixing until just combined.
- Fold in diced strawberries and coconut flakes.
- Pour the batter into greased cake pans.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
Notes
- For extra coconut flavor, use coconut oil in place of regular oil.
- Add whipped cream and fresh strawberries on top before serving.
