Ingredients

- 4 large eggs
- 2 cups chopped tomatoes
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup fresh cilantro, chopped
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion and garlic; sauté until softened.
- Stir in bell pepper, cumin, paprika, salt, and pepper; cook for 5 minutes.
- Add chopped tomatoes; simmer for 10 minutes.
- Make small wells in the mixture and crack an egg into each well.
- Cover and cook until eggs are set, about 6-8 minutes.
- Garnish with cilantro before serving.

- Serve with crusty bread for a complete meal.
