Description

A flavorful stew made with eggs, tomatoes, and peppers inspired by Tunisian cuisine.


Ingredients

  • 4 large eggs
  • 2 cups chopped tomatoes
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup fresh cilantro, chopped


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and garlic; sauté until softened.
  3. Stir in bell pepper, cumin, paprika, salt, and pepper; cook for 5 minutes.
  4. Add chopped tomatoes; simmer for 10 minutes.
  5. Make small wells in the mixture and crack an egg into each well.
  6. Cover and cook until eggs are set, about 6-8 minutes.
  7. Garnish with cilantro before serving.
