A delicious Turkish dessert made with semolina, saffron, and pistachios, soaked in a sweet syrup.

- 1 cup granulated sugar
- 1 cup plain yogurt

- 1/4 cup hot water

- For the syrup:
- 1 cup granulated sugar
- 1/2 cup water
- 1 tablespoon lemon juice
- 1/4 teaspoon saffron threads
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a small bowl, allow the saffron threads to infuse in hot water for about 10 minutes.
- In a separate large bowl, combine semolina, sugar, yogurt, vegetable oil, eggs, baking powder, baking soda, salt, and vanilla extract, mixing thoroughly until smooth.
- Incorporate the saffron-infused water and finely chopped pistachios into the batter.
- Transfer the batter into the greased baking dish, spreading it evenly with a spatula.
- Bake for approximately 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- While the cake bakes, prepare the syrup by combining sugar, water, lemon juice, and saffron threads in a small saucepan.
- Bring the mixture to a boil over medium heat, then lower the heat and let it simmer for about 10 minutes until it thickens slightly.
- Once done, remove the syrup from the heat and allow it to cool.
- When the cake is finished baking, pour the cooled syrup over the hot cake, ensuring it is evenly distributed.
- Let the cake soak up the syrup for at least 30 minutes before cutting it into pieces.
- Serve the cake warm or at room temperature, garnished with extra chopped pistachios.
