Ingredients

- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 teaspoon dried thyme
- 1 can (14.5 ounces) diced tomatoes
- 4 cups vegetable broth
- 1 can (15 ounces) cannellini beans, drained and rinsed
- 2 cups kale, chopped
- Salt and pepper to taste
- 1 tablespoon balsamic vinegar
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, garlic, carrot, and celery. Sauté until softened, about 5-7 minutes.
- Stir in thyme and cook for another minute.
- Add diced tomatoes and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add cannellini beans and kale. Cook until kale is wilted, about 5 minutes.
- Season with salt, pepper, and balsamic vinegar before serving.
Notes
- This soup can be made ahead of time and tastes even better the next day.
- Add pasta for a heartier meal.
