Description

A hearty and flavorful soup inspired by the Tuscan region of Italy, perfect for a cozy meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 teaspoon dried thyme
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 2 cups kale, chopped
  • Salt and pepper to taste
  • 1 tablespoon balsamic vinegar


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrot, and celery. Sauté until softened, about 5-7 minutes.
  2. Stir in thyme and cook for another minute.
  3. Add diced tomatoes and vegetable broth. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Add cannellini beans and kale. Cook until kale is wilted, about 5 minutes.
  6. Season with salt, pepper, and balsamic vinegar before serving.

Notes

  • This soup can be made ahead of time and tastes even better the next day.
  • Add pasta for a heartier meal.
