A creamy and cheesy twice-baked potato dish, perfect as a side or a main course.

- 4 large russet potatoes
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/4 cup butter, softened
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup green onions, chopped
Instructions
- Preheat oven to 375°F.
- Wash and pierce the potatoes, then bake until tender, about 1 hour.
- Remove from oven, scoop out the insides, and mash in a bowl with sour cream, cheese, milk, butter, garlic powder, salt, and pepper.
- Stir in green onions.
- Transfer the mixture to a baking dish and sprinkle with additional cheese.
- Bake for an additional 25-30 minutes until heated through and golden on top.
Notes
- Can be made ahead of time and reheated.
- Feel free to add bacon bits or your favorite seasonings.
