Description

A creamy and cheesy twice-baked potato dish, perfect as a side or a main course.


Ingredients

Scale
  • 4 large russet potatoes
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/4 cup butter, softened
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup green onions, chopped


Instructions

  1. Preheat oven to 375°F.
  2. Wash and pierce the potatoes, then bake until tender, about 1 hour.
  3. Remove from oven, scoop out the insides, and mash in a bowl with sour cream, cheese, milk, butter, garlic powder, salt, and pepper.
  4. Stir in green onions.
  5. Transfer the mixture to a baking dish and sprinkle with additional cheese.
  6. Bake for an additional 25-30 minutes until heated through and golden on top.

  • Can be made ahead of time and reheated.
  • Feel free to add bacon bits or your favorite seasonings.
