Description

A delightful pie combining rich custard with a ginger twist, perfect for any occasion.


Ingredients

  • 1 1/2 cups ginger snap crumbs
  • 1/4 cup unsalted butter, melted
  • 2 cups milk
  • 1 cup heavy cream
  • 4 large eggs
  • 3/4 cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh ginger, grated


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix ginger snap crumbs and melted butter until combined.
  3. Press the mixture into a pie dish to form the crust.
  4. In a saucepan, combine milk and heavy cream; heat until just simmering.
  5. In another bowl, whisk together eggs, sugar, cornstarch, vanilla, and grated ginger.
  6. Slowly whisk in the hot milk mixture into the egg mixture.
  7. Pour the custard filling into the prepared crust.
  8. Bake for 30-35 minutes or until the filling is set.
  9. Allow to cool before serving.

Notes

  • Chill the pie in the refrigerator for a couple of hours for best results.
