- 1 1/2 cups ginger snap crumbs
- 1/4 cup unsalted butter, melted
- 2 cups milk
- 1 cup heavy cream
- 4 large eggs
- 3/4 cup sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon fresh ginger, grated
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix ginger snap crumbs and melted butter until combined.
- Press the mixture into a pie dish to form the crust.
- In a saucepan, combine milk and heavy cream; heat until just simmering.
- In another bowl, whisk together eggs, sugar, cornstarch, vanilla, and grated ginger.
- Slowly whisk in the hot milk mixture into the egg mixture.
- Pour the custard filling into the prepared crust.
- Bake for 30-35 minutes or until the filling is set.
- Allow to cool before serving.
Notes
- Chill the pie in the refrigerator for a couple of hours for best results.
- Serve with whipped cream for added richness.
