Description

Uzbek Lamb and Carrot Pilaf is a flavorful dish combining tender lamb, aromatic spices, and sweet carrots cooked with rice.


Ingredients

Scale
  • 2 cups basmati rice
  • 1 pound lamb, cut into pieces
  • 2 large carrots, julienned
  • 1 large onion, chopped
  • 1/4 cup vegetable oil
  • 4 cups water or broth
  • 2 teaspoons cumin
  • 1 teaspoon coriander
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onions and sauté until translucent.
  3. Add the lamb pieces and cook until browned on all sides.
  4. Stir in the julienned carrots, cumin, coriander, salt, and pepper, and cook for about 5 minutes.
  5. Add the rice and stir to coat.
  6. Pour in the water or broth, bring to a boil, then reduce heat to low.
  7. Cover and simmer for 20-25 minutes, or until the rice is cooked and liquid is absorbed.
  8. Fluff the pilaf with a fork before serving.

Notes

  • For extra flavor, let the pilaf rest for a few minutes after cooking.
  • Serve with a side of fresh salad for a complete meal.
