Description
Uzbek Lamb and Carrot Pilaf is a flavorful dish combining tender lamb, aromatic spices, and sweet carrots cooked with rice.
Ingredients

- 2 cups basmati rice
- 1 pound lamb, cut into pieces
- 2 large carrots, julienned
- 1 large onion, chopped
- 1/4 cup vegetable oil
- 4 cups water or broth
- 2 teaspoons cumin
- 1 teaspoon coriander
- Salt to taste
- Black pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onions and sauté until translucent.
- Add the lamb pieces and cook until browned on all sides.
- Stir in the julienned carrots, cumin, coriander, salt, and pepper, and cook for about 5 minutes.
- Add the rice and stir to coat.
- Pour in the water or broth, bring to a boil, then reduce heat to low.
- Cover and simmer for 20-25 minutes, or until the rice is cooked and liquid is absorbed.
- Fluff the pilaf with a fork before serving.
Notes
- For extra flavor, let the pilaf rest for a few minutes after cooking.
- Serve with a side of fresh salad for a complete meal.
