Description

This Vegan Keto Mince Pie Tart features a deliciously rich filling made from nuts and spices, perfect for your holiday dessert table.


Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol
  • 1/2 cup coconut oil, melted
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 1 cup walnuts, finely chopped
  • 1/2 cup dried cranberries, unsweetened
  • 1 tablespoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 tablespoon lemon juice


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix almond flour, coconut flour, erythritol, salt, and baking soda.
  3. Add melted coconut oil and vanilla extract, mixing until a dough forms.
  4. Press the dough into a tart pan and bake for 10-12 minutes.
  5. In another bowl, combine walnuts, dried cranberries, cinnamon, nutmeg, and lemon juice.
  6. Fill the baked crust with the filling and bake for an additional 20-25 minutes.
  7. Allow to cool before serving.

Notes

  • For a sweeter filling, increase the erythritol to taste.
