- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup erythritol
- 1/2 cup coconut oil, melted
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 teaspoon vanilla extract
- 1 cup walnuts, finely chopped
- 1/2 cup dried cranberries, unsweetened
- 1 tablespoon cinnamon
- 1/2 teaspoon nutmeg
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix almond flour, coconut flour, erythritol, salt, and baking soda.
- Add melted coconut oil and vanilla extract, mixing until a dough forms.
- Press the dough into a tart pan and bake for 10-12 minutes.
- In another bowl, combine walnuts, dried cranberries, cinnamon, nutmeg, and lemon juice.
- Fill the baked crust with the filling and bake for an additional 20-25 minutes.
- Allow to cool before serving.
Notes
- For a sweeter filling, increase the erythritol to taste.
- Can be stored in the refrigerator for up to 5 days.
