Ingredients

- 2 cups mixed nuts (walnuts, almonds, hazelnuts)
- 1 cup cooked lentils
- 1 onion, chopped
- 2 carrots, grated
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 2 tablespoons soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup nutritional yeast
- 1 tablespoon olive oil
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, mix all ingredients until well combined.
- Transfer the mixture to a greased loaf pan and press down firmly.
- Bake for 45-50 minutes or until golden brown on top.
- Let cool for 10 minutes before slicing.

- This nut roast can be made ahead of time and frozen for later use.
- Serve with a rich vegan gravy for a perfect meal.
