Description

A hearty and flavorful Vegan Nut Roast made with nuts, vegetables, and herbs, perfect for any occasion.


Ingredients

Scale
  • 2 cups mixed nuts (walnuts, almonds, hazelnuts)
  • 1 cup cooked lentils
  • 1 onion, chopped
  • 2 carrots, grated
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 2 tablespoons soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup nutritional yeast
  • 1 tablespoon olive oil


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix all ingredients until well combined.
  3. Transfer the mixture to a greased loaf pan and press down firmly.
  4. Bake for 45-50 minutes or until golden brown on top.
  5. Let cool for 10 minutes before slicing.
