Ingredients

- 1 cup cashews
- 1/2 cup coconut milk
- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
- 1 tablespoon orange zest
- 1 cup brewed coffee, cooled
- 1 cup orange juice
- 12 ladyfinger cookies (vegan)
- cocoa powder for dusting
Instructions
- Soak cashews in water for at least 4 hours.
- Blend soaked cashews, coconut milk, maple syrup, vanilla extract, and orange zest until smooth.
- In a shallow dish, mix coffee and orange juice.
- Dip ladyfinger cookies quickly in the coffee mixture.
- Layer soaked ladyfingers, cashew mixture, and repeat until all ingredients are used.
- Chill in the refrigerator for at least 4 hours or overnight.
- Before serving, dust with cocoa powder.
Notes
- This dessert can be made in advance, allowing the flavors to meld.
- For a stronger orange flavor, add additional orange zest to the cashew mixture.
