Description

A flavorful and spicy noodle soup made with tender beef, herbs, and rice noodles.


Ingredients

Scale
  • 1 pound beef brisket
  • 8 cups beef broth
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 star anise
  • 1 cinnamon stick
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 8 ounces rice noodles
  • 1 lime, juiced
  • 2 green onions, chopped
  • 1 cup bean sprouts
  • 1 cup fresh basil leaves
  • 1 jalapeño, sliced


Instructions

  1. In a pot, heat oil over medium heat and sauté onion and garlic until fragrant.
  2. Add the beef brisket, broth, star anise, cinnamon, fish sauce, and sugar. Bring to a boil, then reduce heat and simmer for 1 hour.
  3. Remove the brisket, slice it thinly, and return it to the pot.
  4. Cook rice noodles according to package instructions, then drain.
  5. In bowls, place a portion of noodles, ladle hot broth and beef over them.
  6. Garnish with lime juice, green onions, bean sprouts, basil, and jalapeño.

Notes

  • This soup can be made with different cuts of beef or even chicken.
  • Customize the spice level by adjusting the jalapeño quantity.
