A delicious and nutritious wild rice dish featuring sweet dried blueberries.
Ingredients

- 1 cup wild rice
- 2 cups water
- 1/2 cup dried blueberries
- 1/4 cup chopped pecans
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
Instructions
- Rinse the wild rice under cold water.
- In a pot, combine wild rice and water. Bring to a boil.
- Reduce heat, cover, and simmer for 45 minutes until rice is tender.
- Remove from heat and let sit for 10 minutes.
- Fluff the rice with a fork and stir in dried blueberries, pecans, olive oil, salt, and pepper.
- Garnish with fresh parsley before serving.
Notes
- For added sweetness, consider soaking the dried blueberries in warm water before adding them.
- This dish can be served warm or cold as a salad.
