Description

A delicious and nutritious wild rice dish featuring sweet dried blueberries.


Ingredients

  • 1 cup wild rice
  • 2 cups water
  • 1/2 cup dried blueberries
  • 1/4 cup chopped pecans
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped


Instructions

  1. Rinse the wild rice under cold water.
  2. In a pot, combine wild rice and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 45 minutes until rice is tender.
  4. Remove from heat and let sit for 10 minutes.
  5. Fluff the rice with a fork and stir in dried blueberries, pecans, olive oil, salt, and pepper.
  6. Garnish with fresh parsley before serving.

  • For added sweetness, consider soaking the dried blueberries in warm water before adding them.
