Description

A rich and flavorful Yemeni stew made with tender meat and a unique fenugreek foam.


Ingredients

Scale
  • 2 pounds beef, cut into cubes
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 3 cups beef broth
  • 1 tablespoon fenugreek seeds
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup water


Instructions

  1. Heat oil in a large pot over medium heat. Add the onions and garlic, and sauté until they are translucent.
  2. Add the beef to the pot and brown on all sides.
  3. Stir in the fenugreek seeds, turmeric, cumin, black pepper, and salt.
  4. Pour in the beef broth and water. Bring to a boil, then reduce heat to low and let simmer for about 1.5 to 2 hours, until the meat is tender.
  5. Adjust seasoning as necessary and serve hot with fenugreek foam.

Notes

  • Serve with rice or flatbread for a complete meal.
  • Fenugreek foam can be made by blending soaked fenugreek seeds with water.
