Description
A rich and flavorful Yemeni stew made with tender meat and a unique fenugreek foam.
Ingredients

- 2 pounds beef, cut into cubes
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons vegetable oil
- 3 cups beef broth
- 1 tablespoon fenugreek seeds
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 cup water
Instructions
- Heat oil in a large pot over medium heat. Add the onions and garlic, and sauté until they are translucent.
- Add the beef to the pot and brown on all sides.
- Stir in the fenugreek seeds, turmeric, cumin, black pepper, and salt.
- Pour in the beef broth and water. Bring to a boil, then reduce heat to low and let simmer for about 1.5 to 2 hours, until the meat is tender.
- Adjust seasoning as necessary and serve hot with fenugreek foam.
Notes
- Serve with rice or flatbread for a complete meal.
- Fenugreek foam can be made by blending soaked fenugreek seeds with water.
