- 2 tbsp olive oil
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp smoked paprika
- 1/2 tsp chili flakes (optional, for heat)
- 1 tsp ground cumin
- 1/2 tsp dried oregano
- 1 can (14 oz) crushed tomatoes
- 1/2 cup vegetable broth
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges, for serving
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion and sauté until softened, about 3–4 minutes.
- Stir in garlic, smoked paprika, chili flakes, cumin, and oregano. Cook until fragrant, about 1 minute.
- Pour in crushed tomatoes and vegetable broth. Bring to a gentle simmer.
- Add butter beans, stir well, and cook uncovered for 8–10 minutes, allowing the sauce to thicken.
- Season with salt and black pepper to taste.
- Garnish with fresh parsley and serve warm with lemon wedges on the side.
