Description
A flavorful treat featuring spiced boerewors or Italian sausage served in a toasted bun with sautéed vegetables and a refreshing yogurt dressing.

- 1 pound of boerewors (or Italian sausage as an alternative)
- 4 large hot dog buns
- 1 tablespoon olive oil
- 1 medium onion, finely diced
- 1 bell pepper (any color), chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper (adjust for heat preference)
- Salt and black pepper to taste
- 1 cup shredded iceberg lettuce
- 1 medium tomato, chopped
- 1/2 cup Greek yogurt
- 1 tablespoon lime juice
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Preheat your grill or skillet to medium-high heat. If using boerewors, shape it into a coil and secure it with toothpicks; if opting for Italian sausage, keep them whole.
- Grill the boerewors or sausages for approximately 10-15 minutes, turning them frequently until they achieve a nice golden-brown color and are cooked through. Once done, remove from heat and allow to rest.
- In a separate pan, heat the olive oil over medium heat. Add the diced onion and chopped bell pepper, cooking until they soften, about 5 minutes.
- Incorporate the minced garlic, smoked paprika, cumin, coriander, cayenne pepper, salt, and black pepper. Sauté for an additional 2 minutes until the spices release their aroma.
- In a small bowl, combine the Greek yogurt with lime juice and parsley (if using) to create a refreshing dressing.
- Slice the hot dog buns open and toast them lightly on the grill or in a toaster until golden brown.
- To put it all together, place a piece of boerewors or sausage into each bun, generously top with the sautéed onion and bell pepper mix, followed by the shredded lettuce and chopped tomato. Finish with a drizzle of the yogurt dressing.
