- 12 Medjool dates, pitted
- 1 cup shredded coconut
- 1/2 cup almond butter
- 12 almonds
- 1 cup dark chocolate chips
- 1 tablespoon coconut oil
Instructions
- Preheat your oven to 350°F (175°C).
- Slice the dates open lengthwise and fill each with a spoonful of almond butter.
- Press one almond into each stuffed date.
- Place the stuffed dates on a baking sheet.
- Melt the dark chocolate chips and coconut oil together until smooth.
- Drizzle the melted chocolate over each stuffed date.
- Bake for 10 minutes or until the chocolate is set.
- Let cool before serving.
Notes
- For added crunch, use roasted almonds.
- Adjust the sweetness by using sweetened or unsweetened coconut.
- Store any leftovers in an airtight container.
