Description

Fluffy, delicious pancakes made with yogurt and apples, perfect for breakfast or brunch.


Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup plain yogurt
  • 1 large egg
  • 1 tablespoon vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup diced apples


Instructions

  1. In a bowl, mix the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together the yogurt, egg, oil, and vanilla extract.
  3. Combine the wet and dry ingredients until just mixed.
  4. Fold in the diced apples.
  5. Heat a skillet over medium heat and pour batter to form pancakes.
  6. Cook until bubbles form, then flip and cook until golden brown.
  7. Serve warm with maple syrup or toppings of your choice.

Notes

  • For extra flavor, add cinnamon to the batter.
  • These pancakes freeze well; simply reheat in the toaster.
