Instructions
- In a bowl, mix the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the yogurt, egg, oil, and vanilla extract.
- Combine the wet and dry ingredients until just mixed.
- Fold in the diced apples.
- Heat a skillet over medium heat and pour batter to form pancakes.
- Cook until bubbles form, then flip and cook until golden brown.
- Serve warm with maple syrup or toppings of your choice.
Notes
- For extra flavor, add cinnamon to the batter.
- These pancakes freeze well; simply reheat in the toaster.
