A delicious and savory baked feta shakshuka, perfect for brunch.
Ingredients

- 1 block feta cheese
- 2 tablespoons olive oil
- 1 large onion, chopped
- 1 bell pepper, chopped
- 4 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 can (28 ounces) crushed tomatoes
- 6 large eggs
- ¼ cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a cast-iron skillet, heat olive oil over medium heat. Add onion and bell pepper and sauté until softened.
- Add garlic, cumin, and paprika, cooking for another minute.
- Stir in crushed tomatoes, and season with salt and pepper. Let it simmer for 10 minutes.
- Make wells in the sauce and gently crack eggs into each well. Top with feta cheese.
- Bake in the oven for 15-20 minutes or until eggs are set.
- Garnish with fresh parsley and serve warm.

- Serve with crusty bread for dipping.
- Use different vegetables for variety, like zucchini or spinach.
