Description

A delicious and savory baked feta shakshuka, perfect for brunch.


Ingredients

Scale
  • 1 block feta cheese
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 can (28 ounces) crushed tomatoes
  • 6 large eggs
  • ¼ cup fresh parsley, chopped
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a cast-iron skillet, heat olive oil over medium heat. Add onion and bell pepper and sauté until softened.
  3. Add garlic, cumin, and paprika, cooking for another minute.
  4. Stir in crushed tomatoes, and season with salt and pepper. Let it simmer for 10 minutes.
  5. Make wells in the sauce and gently crack eggs into each well. Top with feta cheese.
  6. Bake in the oven for 15-20 minutes or until eggs are set.
  7. Garnish with fresh parsley and serve warm.
