Description

Deliciously tender baked salmon meatballs served with a creamy and nutritious avocado sauce.


Ingredients

  • 1 pound salmon fillet, skinless
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 avocados
  • 1 tablespoon fresh lime juice
  • 1/4 cup Greek yogurt
  • 1 clove garlic, minced
  • 1/4 teaspoon salt


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a food processor, pulse the salmon until finely chopped.
  3. In a bowl, combine chopped salmon, breadcrumbs, Parmesan cheese, egg, parsley, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  4. Form the mixture into meatballs and place them on a baking sheet.
  5. Bake for 15-20 minutes or until cooked through.
  6. For the avocado sauce, blend avocados, lime juice, Greek yogurt, minced garlic, and salt until smooth.
  7. Serve the meatballs warm with the creamy avocado sauce drizzled on top.
