Description

Delicious beef and potato empanadas that are perfect for dinner or a snack.


Ingredients

Scale
  • 1 pound ground beef
  • 2 cups potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil
  • 1 package empanada dough
  • 1 egg, beaten (for egg wash)


Instructions

  1. In a large skillet, heat olive oil over medium heat. Add onions and garlic, and sauté until translucent.
  2. Add ground beef, breaking it apart and cooking until browned.
  3. Stir in cumin, paprika, salt, and pepper.
  4. In a separate pot, boil diced potatoes until tender. Drain and mix with beef mixture.
  5. Preheat the oven to 400°F (200°C).
  6. Roll out empanada dough and cut circles. Fill with beef and potato mixture, fold, and seal edges.
  7. Place on baking sheet, brush with egg wash, and bake for 20-25 minutes or until golden brown.

Notes

  • For a spicier version, add chili powder to the beef mixture.
  • These can be made ahead and stored in the freezer for quick meals.
