Delicious beef and potato empanadas that are perfect for dinner or a snack.
Ingredients

- 1 pound ground beef
- 2 cups potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons olive oil
- 1 package empanada dough
- 1 egg, beaten (for egg wash)
Instructions
- In a large skillet, heat olive oil over medium heat. Add onions and garlic, and sauté until translucent.
- Add ground beef, breaking it apart and cooking until browned.
- Stir in cumin, paprika, salt, and pepper.
- In a separate pot, boil diced potatoes until tender. Drain and mix with beef mixture.
- Preheat the oven to 400°F (200°C).
- Roll out empanada dough and cut circles. Fill with beef and potato mixture, fold, and seal edges.
- Place on baking sheet, brush with egg wash, and bake for 20-25 minutes or until golden brown.
Notes
- For a spicier version, add chili powder to the beef mixture.
- These can be made ahead and stored in the freezer for quick meals.
